One of the biggest challenges when buying exotic oils, is figuring out what to use it for without feeling like you're wasting it. As a general rule, I use avocado oil and a great quality extra virgin olive oil interchangeably.The color is a beautiful shade of green, the taste has the distinctive creamy and slightly grassy/slightly sweet taste of avocados. It's great on salads, to dip bread into, or drizzled on soups or stews. I've also cooked with it when the flavor of avocado will pair nicely. I tend to use it in Latin American dishes, because I follow the rule of "if it grows together it goes together."
