I purchased White Knight Light Roast specifically for home brewing and it is excellent. After grinding the bean, it has a wonderful, rich aroma that starts off chocolatey and finishes with a hint of smoke. The benefit of a quality light roast in a cold brew is that the brewing process brings out more subtlety of the bean without it getting overpowered by the flavor of a darker roast but this only works if your bean has qualities worth extracting.

White Knight Light Roast is excellent for this purpose. Once brewed, the lighter quality of the bean really lets the full flavor profile of the coffee come forward. I recommend coarse grinding the bean before the brew, let brew for 10-12 hours and serve over ice with milk. As wonderful a cup of cold brew as I've ever brewed.
